Seel & Slater: New York-Inspired Restaurant Opening In Liverpool’s Ropewalks

A taste of New York is coming to Liverpool’s Ropewalks when Seel & Slater opens in the former Wreck Bistro building on Friday 9 October.

The new venture from award-winning chef Andrew Sheridan and Open Restaurant Group will bring a 45-cover restaurant, bar and grill to the Grade II listed building. A late-night cocktail bar will open downstairs later this year.

Named after the two streets it sits between, Seel & Slater takes inspiration from New York’s Italian-American dining rooms and steakhouses. The upstairs restaurant will open seven days a week from 8am, serving breakfast and brunch, followed by lunch, dinner and drinks.

Sheridan’s menu promises handmade pasta, prime cuts from the grill and generous New York-style dishes. Early highlights include a pastrami doughnut, dry-aged ribeye known as The Don, lobster lasagne and New York cheesecake brûlée.

“There’s something about the old New York dining rooms that I’ve always loved – the food is generous, the rooms have energy and you can settle in for as long as you like,” said Sheridan. “That’s what we wanted to bring to Seel & Slater.”

Downstairs, Slater will take its cue from the jazz clubs and late-night bars of 1940s New York. Its opening date and further details have yet to be announced.

Seel & Slater follows Open Restaurant Group’s acquisition of Wreck Bistro earlier this month. It will be the group’s second Liverpool restaurant alongside Sheridan’s Restaurant 8 on Cook Street, which holds three AA Rosettes and is listed in the Michelin Guide.

The restaurant opens on Friday 9 October, and the booking waitlist is now open.
