Seel & Slater: Andrew Sheridan’s New York-Inspired Restaurant Opens in Liverpool

The doors to the highly anticipated Seel & Slater will open this Friday 9 October at 3pm, with bookings for the New-York inspired restaurant, bar and grill now open.

Among the exciting and ambitious menu for this weekend’s first diners include Sheridan’s indulgent take on an American Italian classic, Lobster Lasagna. The dish will see lobster paired with a shellfish bisque, brown butter and parmesan – rich, decadent and a playful spin on New York dining. 

The new restaurant and bar from Open Restaurant Group is taking over the former Wreck Bistro site, transforming the Grade II listed building into a New York-inspired destination influenced by the Italian-American dining rooms, steakhouses and late-night bars of Manhattan.

Upstairs, the 45-cover restaurant will open seven days a week from 8am, taking guests from breakfast and brunch through to long lunches, dinner and late-night drinks. 

Alongside the Lobster Lasagna, the menu will feature generous plates, prime cuts from the grill, handmade pasta and classic New York favourites, including a pastrami doughnut, “The Don” dry-aged ribeye and New York cheesecake brûlée.

Downstairs, Slater, a low-lit late-night cocktail bar inspired by the jazz clubs and bars of 1940s New York, will follow later this year.

The restaurant is the latest project from award-winning chef and restaurateur Andrew Sheridan, whose Liverpool restaurant Restaurant 8 holds three AA Rosettes and is listed in the Michelin Guide.

Andrew Sheridan, chef and co-founder of Open Restaurant Group, said: “We’ve been working incredibly hard behind the scenes to bring Seel to life and we can’t wait to show everyone what we’ve been building this Friday. 

“We wanted to capture the bold energy of New York with quality steaks and homemade pasta dishes and have and have built an exciting and unique menu, with a line up of amazing dishes including an indulgent lobster lasagna. We are looking forward to opening our doors and hearing what people think.”

Seel & Slater is the latest project from Open Restaurant Group, the independent restaurant group behind Restaurant 8 on Cook Street, which holds three AA Rosettes and is listed in the Michelin Guide. The group now operates nine sites across the North West and North Wales, with Seel & Slater becoming its second Liverpool restaurant.
