Calfreezy and Hawksmoor Launch Limited-Edition Bacon Double Cheeseburger ‘The Burgurr’

As part of its continued 20th anniversary celebrations, Hawksmoor has teamed up with one of the UK’s most influential burger voices, Callum Airey – better known as Calfreezy – to create The Burgurr, a limited-edition bacon double cheeseburger available across all Hawksmoor restaurants in the UK and Ireland from 3 August. 

Callum Airey – a podcaster and one of the UK’s biggest YouTubers – has spent years ranking, reviewing and critiquing burgers for an audience of millions, and even hands out his own Golden Burger Award to those that meet his standard. A longstanding Hawksmoor regular, he has ranked the group’s burgers among the best in the country independently of this partnership. In recognition of that expertise and history with Hawksmoor, the collaboration gave him complete creative control over a new burger for the menu, working directly with Hawksmoor’s Group Executive Chef Matt Brown to develop, The Burgurr.

Hawksmoor’s own burgers have built a reputation to rival its steaks. Group Executive Chef Matt Brown, who worked in multiple Michelin-starred kitchens before joining Hawksmoor, is the chef behind the Big Matt and the Royale with Cheese – burgers that helped earn Hawksmoor the title of World’s Best Burger in 2023, with the Royale with Cheese most recently ranking No. 7 in the World’s 10 Best Burgers list. Pairing one of the most exacting and outspoken burger critics with the chef behind some of the UK’s most renowned burgers made this collaboration feel, to both sides, like an obvious match.

“There wasn’t a burger already sitting on the menu plan waiting for Cal’s name, we built this from scratch, and I gave him real free rein,” says Matt Brown, Group Executive Chef at Hawksmoor. “Cal claims he knows burgers better than almost anyone, and from day one he had really clear ideas about what he did and didn’t want. We worked through every detail together, testing and refining, until we had something we were genuinely proud to put on the menu. It’s a proper Hawksmoor burger, built to the same standard as everything else we serve.”

The Burgurr comprises two dry-aged British beef patties, American cheese, smoked streaky bacon, white onion, a signature burger sauce and a milk bun, made using the same sourcing and standards applied across Hawksmoor’s menu. Have it on its own, or add beef-dripping fries and peppercorn sauce, exactly how Cal has his. 

The result is a burger that reflects Cal’s tastes while remaining true to everything Hawksmoor stands for. “I’ve reviewed and ranked more burgers than I can count, so there is real pressure on me to get it right when it came to putting my own name on one,” says Callum Airey (Calfreezy). “Hawksmoor was an obvious partner, I’ve been going there for years and know the level of detail and quality that goes into their ingredients and menus, so getting to create my own with Matt was a bit of a dream – I knew we could make something deserving of a place on its menu. I didn’t want anything over the top or built for a moment online; it needed to genuinely be a great burger. I’m clearly not a chef, so thankfully Matt did the actual cooking, my job was making sure every detail lived up to what I believe are the exacting standards of a great burger.”

The collaboration marks two decades of Hawksmoor championing exceptional British beef, world-class hospitality, and some of the country’s most celebrated burgers.

Since opening its first restaurant in 2006, Hawksmoor has grown to 14 restaurants across the UK, Ireland and the US, earning an international reputation for its burgers as well as its steaks.
