
New Restaurant Hume Brings Healthy, Sustainable Dining To Liverpool
A brand-new restaurant focused on wholefoods, wellbeing and sustainability has officially opened in the heart of Liverpool.
Hume, located on Gradwell Street, is the brainchild of founder Allan Eves and serves up nourishing breakfast, brunch and lunch dishes, alongside speciality coffee, cold drinks and a curated selection of organic, biodynamic wines and beers.

Open Wednesday to Sunday, Hume offers a nutrition-packed, meat-free menu that’s proudly free from ultra-processed ingredients. Every dish is created using wholefoods only – with no stabilisers, emulsifiers, sweeteners or additives in sight. This dedication to health-conscious dining is matched by the restaurant’s ambition to support the wellbeing of both the local community and the planet.
Driven by a personal mission to honour the memory of his late mother, who passed away from cancer in 2024, Allan Eves hopes Hume will contribute to a healthier and more sustainable way of living in Liverpool.
“I’m hoping I can honour her memory by creating something which will contribute to the health and happiness of the Liverpool community and be in service to the natural world that we all share,” Allan said.
“The rise of non-communicable diseases, including cancer, is heartbreakingly common, and they needn’t be. With Hume, we’re focused on putting goodness into our bodies while also respecting the sustainability and health of the planet.”

From the Korean-style Pak Choi and Crispy Sesame Tofu to the hearty Ultimate Bean on Toast and the unique Lion’s Mane Steak, the menu celebrates ingredients that are rich in nutrients and known for their disease-preventing properties.
But Hume isn’t just about the food. The venue is also available for private hire and is licensed, offering a selection of high-quality drinks that stay true to its ethos of using minimally processed ingredients.
With a community-first approach, Hume also aims to build partnerships across the city, working with schools, universities, the NHS, the council and other organisations to promote healthier living and contribute to the Liverpool City Region’s Net Zero Pathway and Sustainable Development Goals.
Allan adds: “Life is about balance and we all like to let our hair down now and again. We’ve made sure that even our alcoholic drinks align with our philosophy – offering the best in organic and natural wines and beers.”
