Ethical Eats and Hidden Gems: Inside ‘That Tastes Wild’ Sustainable Liverpool Food Tour

A unique culinary adventure awaits with That Tastes Wild, a Liverpool food tour that is a celebration of ethical food, sustainable practices, and the hidden gastronomic treasures of the city. We spoke to Helena Ashkanfar-Appleton, the visionary behind this impressive venture, to uncover the inspiration, mission, and future of That Tastes Wild.

Liverpool Noise: Hi Helena, can you tell us about the inspiration behind “That Tastes Wild” and how it came to be?

Helena: Well I love great food and I’m always looking for an adventure, so I decided to combine these interests to create unique experiences that showcase the best in ethical food and reveal the hidden gems of familiar places. With a background in environmental management and extensive experience in sustainable food systems, it’s incredibly rewarding to share my knowledge and enthusiasm with our tour guests.

Liverpool Noise: What makes Liverpool an ideal city for a sustainable food and drink tour?

Helena: Liverpool might not be the first city that comes to mind for sustainable food and drink, but there is actually an incredible amount of innovation and community activism in the city. The tour delves into Liverpool’s rich history in creating world-famous food and drink brands, highlights the efforts of community activists ensuring everyone has access to great food, and showcases the pioneers shaping the future of Liverpool’s food scene. Liverpool Noise: How do you select the locations and experiences featured on the tour?

Helena: Each location and company featured on the tour is exceptional in their field. Our selections include award winners, innovative creators, and unique, one-of-a-kind spots.

Liverpool Noise: Foraging in an urban environment sounds intriguing. What are some of the most interesting items people can forage in Liverpool’s city centre?

Helena: You’ll have to join the tour to uncover the fascinating items you can forage in Liverpool’s city centre! You’ll be surprised by the number of incredible edibles hidden in plain sight.

Liverpool Noise: How does the tour educate visitors about sustainability in food and drink production?

Helena: The term ‘sustainable food’ can sometimes feel a bit abstract. A That Tastes Wild tour brings this concept to life through conversations about what sustainable food means to the people and businesses of Liverpool. We hear real stories and examples, making sustainability tangible and inspiring.

Liverpool Noise: What role do local communities and growers play in the tour, and how does That Tastes Wild support them?

Helena: Independent food producers often face tough competition from supermarkets, which is why it’s crucial to highlight and support the incredible community groups and business owners right on our doorstep. By featuring these local heroes on our tour, we help promote and sustain their efforts. This is your chance to meet the inspiring people bringing fantastic food and drink to Liverpool – and taste it of course.

Liverpool Noise: The tour includes a ‘pay it forward’ donation to Squash Nutrition. Can you tell us more about this initiative and its impact?

Helena: Soup it Forward is a simple yet powerful initiative with a significant impact. Customers at Squash can purchase a soup voucher, which is then placed outside the shop for anyone in need to pick up and exchange for a free meal. This community-driven approach supports those struggling to make ends meet while maintaining their dignity and respect.

Liverpool Noise: How do you see That Tastes Wild evolving in the next few years?

Helena: I envision expanding our tours to include visits to pioneering food and drink producers, offering behind-the-scenes access to places typically off-limits to the public. Imagine exploring 3D ocean farms, underground mushroom producers, or rooftop vertical farms. Stay tuned and join us on this exciting journey into the future of food. Watch this space!
