Ma Boyle’s Alehouse and Eatery Collaborates With Guinness For World’s First ‘Guinness Scouse’

Liverpool’s most iconic dish is getting a bold new twist as Ma Boyle’s Alehouse and Eatery teams up with Guinness and brand owners Diageo to launch the world’s first ever Guinness Scouse – a flavour-packed fusion that brings together two cultural legends.

As part of the return of Ma Boyle’s Global Scouse Month 2026, the much-loved Liverpool venue is unveiling four world-first Guinness Scouse specials, alongside its famous Scouse classics. The month-long celebration runs from Wednesday 11 February to Wednesday 11 March 2026, marking Ma Boyle’s second year of turning Global Scouse Day into a full-blown citywide celebration of Liverpool food heritage.

A Global Celebration of a Liverpool Classic

Global Scouse Month sits alongside the annual Global Scouse Day on Saturday 28th February, when Scousers across the world celebrate the historic dish that helped shape the city’s identity. What started as a humble, filling stew born from Liverpool’s maritime history has become a symbol of the city’s resilience, creativity and culture.

Originally derived from the sailors’ dish Lobscouse, Scouse was eaten by seafarers travelling across Northern Europe and became embedded in Liverpool’s port culture. Over generations, it evolved into the hearty stew known today – traditionally made with slow-cooked meat, potatoes, carrots and onions, served with pickled red cabbage or beetroot and crusty bread. Today, Scouse is more than a meal – it’s a marker of identity, pride and belonging.

Guinness x Scouse: A World-First Collaboration

This year’s celebration is extra special. Ma Boyle’s has exclusively collaborated with Guinness to create four brand-new, world-first Scouse dishes, infusing the iconic Irish stout directly into the cooking process.

The new specials include:

  • Ma’s Guinness Scouse
  • Ma’s Veggie Guinness Scouse
  • Ma’s Guinness Scouse Pie
  • Ma’s Veggie Guinness Scouse Pie

Developed in-house by the Ma Boyle’s kitchen team, the dishes feature locally-sourced British beef marinated in Guinness, with the stout also used in the reduction stage of cooking to create a deep, rich gravy. The vegetarian and vegan versions are served with a luxurious Guinness gravy too, ensuring the same depth of flavour across all variations.

It’s a collaboration that blends two cultural icons – Liverpool’s most historic dish with the city’s most popular pint – creating something entirely new while staying rooted in tradition.

From Viral Scouse to Global Recognition

Ma Boyle’s Global Scouse Month has already made international waves. Last year, the venue welcomed the Japanese Ambassador to the UK, Hiroshi Suzuki, who tried Scouse for the first time alongside Metro Mayor Steve Rotherham. His verdict – “that’s boss scran” – went viral, reaching millions worldwide and cementing Ma Boyle’s reputation as the home of Scouse on a global stage.

Now, with Guinness on board, Ma Boyle’s is taking Scouse to a whole new level.

“We Knew We Wanted to Do Something Different”

Iain Hoskins from Ma Pub Group said: “We couldn’t be prouder this year to be collaborating with Guinness with four world’s first brand new Scouse dishes. Ma Boyle’s is legendary for its Scouse and we’re known for its popular variations. Last year, as part of our Global Scouse Month, in addition to the puff-pastry pie version we introduced a Scouse Cottage Pie and also a Spicy Scouse, with chorizo and sweet potato that was so in demand we kept it on the menu.

Scouse is more popular than ever, with locals and tourists seeking out Ma Boyle’s for it. For 2026 we knew we wanted to do something different and infuse Guinness into four brand-new Scouse dishes to complement our existing classics. Scouse is so versatile and ripe for invention with countless variations available, so it feels fitting to introduce these debut dishes.”

Slow-cooked British beef marinated with Guinness Irish Stout, with potatoes, carrots, onions and celeriac in a rich Guinness gravy. Served with buttered Plattsville sourdough and pickled red cabbage.

A vegan version of Ma’s Classic Guinness Scouse. All of the love – none of the meat.

Guinness Scouse topped with flaky puff pastry, served with seasonal vegetables and spring onion mash or Ma’s home-cooked chunky chips, with a pot of Guinness gravy.
