Liverpool’s Manifest Introduces New Guest Chef Series ‘Mani-Guest’
An incredibly exciting new guest chef series at Manifest, coined ‘Mani-Guest’, kicks off on 2 March and it’s starting off with bang. The entire chef series, with more dates and chef announcements dropping throughout the year will be a celebration of the most exciting and trailblazing chefs around the UK – chefs who are really setting out to do something totally original.
Enter, one of Scotland’s shining stars, Head Chef and esteemed restaurateur, Tomás Gormley of the much-celebrated Skua and Cardinal, both based in Edinburgh.

Manifest will be hosting two sittings on 2 March, one at 2pm at one at 6pm. The six-course menu is set at £100pp with an option to select paired wines from Manifest’s extensive and beautifully curated wine selection. Bookings can be made via this link.
Manifest was opened by Chef Patron Paul Durand and his wife and business partner Charlotte Jones in Liverpool in 2022, taking the name from its historic setting in the city’s creative and foodie hotspot, the Baltic Triangle. It’s nestled on a side street in a historic warehouse building where Manifest brings the history and modern vibrancy of the area to life.
The name Manifest is multi-layered. Not only is the restaurant the result of a manifestation between Paul and Charlotte but links back to the history of the site as well as Chef Paul’s family. Working on the docks, the Baltic Triangle was a hub of the shipping trade where every day produce from all over the world was imported. Chef Paul uses ingredients that hark back to those countries where trade was most prevalent with the UK. A shipping manifest is a document that provides a comprehensive list of the items loaded onto a vessel for transport.
Inspired by Paul’s travels abroad European cities such as Bologna and Bordeaux and these cities’ thriving relaxed casual dining scenes, Manifest represents a combination of a relaxed continental flow and a modern fine dining experience, showcasing the best local produce native to Merseyside and the North of England.
Since opening, Manifest was submitted to the Michelin Guide within 4 months; has been included in the Square Meal Top 100 three times, National Restaurant Awards Top 100 twice and is the only restaurant in Liverpool to make this list, and Paul was awarded The Staff Canteen Awards 2022 ‘One to Watch’ Winner in 2022 to name a few of its other achievements so far.
This elegant industrial-style restaurant and bar has brought a new style of dining to the Liverpool food scene.
